Strawberry Mousse Parfaits


Strawberry Mousse Parfaits
Makes 12 servings
2 pkg. (10 oz each) frozen sweetened sliced strawberries, thawed, undrained 1 Tbsp plus 2 tsps cornstarch
1 can (14 oz) sweetened condensed milk

2 Tbsp orange juice

2 cups heavy whipping cream, whipped


Place strawberries in blender and process until pureed.
In a small saucepan, combine cornstarch and strawberries until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer to large bowl; refrigerate until chilled.

Set aside 1/2 cup strawberry mixture. Add the condensed milk and orange juice to the remaining mixture; stir until blended. Fold in whipped cream.


Spoon 1/4 cup cream mixture into each cup/dish. Layer with 4 tsp of reserved strawberry mixture and top with 1/4 cup cream mixture.
Refrigerate until serving.

I made half and we got plenty more than we'll probably ever eat. I added too much condensed milk which made the parfaits really sweet. They were still really good but you could only eat a tiny bit before you had had too much. So be careful. I also used fresh strawberries and just sweetened them with sugar after cutting them up. Fresh strawberries are in season and on sale so why not use those instead of buying the more expensive frozen kind.
